Let's see if I can get back into the swing of things with blogging my daily menus again...
Breakfast was scrambled egg substitute, sliced tomato, mandarin orange segments, and a bagel thin with fat free cream cheese. Believe it or not, this big breakfast is only 3.5 points!
Lunch was a sandwich of turkey breast lunch meat, a fat free cheddar cheese slice, Lettuce, and tomato on a sandwich thin. I nuked some broccoli slaw until it was tender crisp and mixed it with some Brummel & Brown Buttter Spread...OMG!!! This was so good. I will be having this as a side dish on a regular basis! I also had a 'Cutie" mandarin orange. 5 points
Dinner was spaghetti that I made. I used whole wheat pasta. I made the sauce with lean ground turkey, a jar of spaghetti sauce, two cans of Italian style stewed tomatoes, and a diced onion. Next time I'll add a can of tomato paste to thicken the sauce more. The Pasta is 3 points for a cup and the sauce is 4 points per cup. I made a ton and froze the leftovers in individual serving sizes.
I had steamed broccoli and a fresh spinach salad on the side. I sprayed the salad with olive oil and Balsamic vinegar and topped it with a diced Laughing Cow, Blue Cheese flavored wedge. If you haven't tried the Blue Cheese Laughing Cow...DO!!! It's awesome. It really tastes like blue cheese! Dinner was 10 points
After dinner I had some Fage Greek 0% Yogurt sweetened with sugar free almond syrup and flavored with a dash of fat free, sugar free chocolate pudding mix, and topped with a few blueberries. 2.5 points.
I also snacked on some grapes while I cooked dinner, cleaned the fridge out, and started the laundry... 1.5 points
