Wednesday April 7...

Earlly Morning: Coffee with Coffeemate and stevia

Lunch:

Afternoon Snack: 1 cup Progresso Light Beef Sirloin Soup

Dinner:
We got home late from having our taxes done so I threw together a burrito/Wrap from things I had in the fridge.

3 oz Canned Chicken breast 2
1/4 cup Black Beans .5
2 Tbs Salsa 0
1/4 cup Shredded Mexican Blend reduced Fat Cheese 1
1 cup Shredded Lettuce 0
6 Grape tomatoes
1 Mission 100 Calorie Tortilla 1
Total 5.5

I put the chicken breast and black beans in a bowl with 1 Tbs of salsa and heated it in the microwave. While it was heating I warmed the tortilla in a dry skillet on top of the stove. I laid the tortilla on a paper towel and spooned the chicken/bean mixture down the center.


I topped this with the shredded cheese, lettuce, tomato, and a little bit of cilantro.


I rolled it up and mixed the other Tbs of salsa with a Tbs of FF yogurt and used a dab of as a condiment with the wrap.
This was a great "throw together" meal for 5.5 points....definitely a keeper.



I had some points left so I had a cup of Fat Free Plain Greek yogurt sweetened with Stevia and topped with Strawberries, mandarin orange segments and Walden Farms Chocolate Syrup 6 points

My positive choice today was having the 1 point soup when I got hungry in the late afternoon. It kept me from getting hungry while we were having our taxes done and thus having a melt down on the way home and being tempted to stop and fast food.
